When we lived away from "home,"
I would always try and keep track of the "up and coming" in Salt Lake.
When we moved back,
I try to keep up on the "up and coming" in Ohio.
(Much harder)
This is one little item that I recently learned about,
I must share.
There's a little shop in St. George called: "Swig"
It's a drink shop!
We have not been to St. George in a couple years....I obviously need to make this my first stop.
My friend was telling me about their "Dirty Diet Cokes."
I'm not a soda drinker.
So how should I know?
She brought one over that she conjured in her kitchen.....
Oh. My. Goodness.
It was love at first taste.
Then she explained:
"They have a sugar cookie that's yummy too!"
"Both together just make your day!"
Not only have I been using a "Dirty Diet Coke" as migraine rememdy.
(Although....I have switched to "Dirty Dr. Pepper")
But I decided to try and replicate the cookie.
After much searching and interviewing,
I learned about an "old" popular cookie recipe that is much like a melt-away.
(Thanks to my mother)
In fact, I bet your oldest ward cook book has one in it!
Today was rainy a Sunday afternoon....so we decided to give it a try.
Lauren and I made the recipe that I modified.
I had my camera lying in wait....and the cookies LITERALLY disappeared!!!
These tasty bites, didn't stand a chance!
From my kids, to friends, neighbors, and anyone on the street.....
they were disappearing before my eyes!
Must be the reason for the name: "Melt Away."
The recipe is as follows:
Preheat oven to 350 degrees
In a large bowl cream:
1 C. Butter
3/4 C Canola Oil
1 1/4 C. Sugar
3/4 C. Powder Sugar
In a small bowl wisk:
2 T. water
2 eggs
1 tsp. vanilla
Add egg mixture to Butter and sugar mix and blend until light and fluffy.
Sift together:
5 1/2 C. Flour
1/2 t Baking soda
1/2 t Cream of Tarter
1 t. Salt
Slowly mix flour mixture into creamed mixture. Roll Dough into (about) 2 in ball and place on cookie sheet lined with "silpat" (or parchment). Fill a small dish with 1/2 granulated white sugar and sprinkle with 1/8 fine salt. Take a 10-12oz drinking glass and dip the bottom of the glass into the cookie dough. Just enough for the oil in the dough to coat the very bottom of the glass. Then dip the glass into the shallow dish of sugar/salt. Use this to press each ball of dough down. The edges will be cracked and ragged on the dough. (Think "thick" cookie) That's what makes it a pretty cookie. Repeat for each cookie.
Bake at 350 for 8-10 minutes.
(Cookies do not brown, so don't wait for them to become golden.)
Frosting:
1/2 c butter (room temp--don't microwave)
3/4 cup sour cream (I used light)
1/2 t salt
2 lb powder sugar (I used a little less)
1/4 c. evaporated milk.
2 drops red food coloring
Cream ingredients together and frost cooled cookies.
My "Dirty" Dr. Pepper can be found at local gas stations like Holiday.
Party Ice (Little tiny ice)
16 oz Cola (Diet Coke, Dr. Pepper)
3 pumps coconut syrup
1/4 fresh squeezed lime OR 1 pump lime syrup.
ENJOY!
(****I have never actually been to SWIG, I don't know what their items taste like. I just know what the chatter is here in town and what I can conjure up! But I can't WAIT to stop in when I'm in town!*****)
