Out Wth the Old.....


....and In With the New!!!!!

Happy New Year!
(I know, that is a little cheesy...but Gabe made this plate while waiting for dinner. I couldn't resist.)
Now...let's get to dinner!

We always start by getting out the Paellero.
(A flat and shallow pan with distinct indentions on the bottom for cooking.)
Filling it with Sofrito.
(Or really yummy ingredients!)
A few fresh and peeled tomatoes.
1 fresh yellow onion.
1 bay leaf.
2 roasted red peppers.
2 Tablespoons Olive Oil.
3 cloves of FRESH garlic.

Cook on Medium heat. Until the moisture is cooked out.
And the ingredients start to come together.
Then add the desired amount of Aborio rice.
1 to 1 1/2 cups.
Cook on Medium heat until rice is toasted.
Add double the water or stock.
Add husband.


In the last 5-10 minutes of cooking add:
4 pieces of saffron (or sometimes you can find paella seasoning packets)
salt and peper
1/2 cup frozen peas
12 jumbo shrimp.
12 fresh/rinsed/de-bearded mussles.
12 fresh and rinses clams.
Cover with towel or foil or lid.
Cook until all shell fish open.
Add delicious crusty bread.
Eat to your hearts content.

(I'm not posting this recipe because I didn't totally love it....and I couldn't stop thinking about the amount of butter in it!)
Our kids were drooping by 9:30 so we welcomed the New Year on Eastern Time.
Or-10:00 our time.
12 grapes in hand, and waiting for the last 12 seconds of the countdown to plop them in our mouths!

Then, outside (in 6 degree weather) to do our poppers and confetti!
It was so cold that Ava's hands were frozen to the pop-gun!
Brrrrrrrr!
